Origin: Estate-owned vineyards in the Villanuova and Aie areas in Canelli
Training system and management: Simple Guyot training with a planting distance of 90 x 200 cm, organically farmed
Average vine age: 20 years
Soil: White marlstone of medium texture with calcareous tendency
Exposure and altitude: Due west, at an altitude between 200 and 270 m a.s.l.
Grape yield per hectare: 90 quintals
Grape to wine yield: 70 litres per 100 kg of grapes
Harvest: Manual harvest in small perforated baskets of 22 kg
Vinification: The grapes were immediately pressed and the resulting must underwent a light sulphiting before being naturally decanted. Once filtered, it was kept at 0°C until natural fermentation, which took place in small stainless steel autoclaves with the addition of selected yeasts
Ageing: In bottle, in an upright position, for a minimum of 12 months
Alcohol content: 5.5% vol.
Sugar: 130 g/l
Total acidity: 5.5 g/l
Characteristics: A Moscato of remarkable character, with a colour tending towards gold. On the nose it is a delicate explosion of peach blossom, acacia and honey. On the palate it impresses with the lushness of its texture and the balance between sweetness, acidity and vivacity
Food pairings: It pairs perfectly with cured meats and fresh cheeses, spicy and hot dishes, mollusks and shellfish. Classic pairings are also recommended, such as fruit tarts, desserts and almond-based biscuits, as well as leavened pastries like panettone or colomba
